Skillet Hash

Serves 4
Place 1 & 1/2 lbs red potatoes (cut into 1 inch chunks) into a saucepan fitted with a steamer basket. Cook covered for 8-10 minutes until tender.
Heat 1 tablespoon olive oil in a large nonstick skillet over medium heat. Add 8 ounces turkey kielbasa (diced) and 1 bunch sliced scallions. Cook until scallions are slightly softened about 2 minutes.
Add in potatos and saute for about 5-7 minutes.
Sprinkle with 1 teaspoon paprika, 1 teaspoon Italian seasoning, 1/2 teaspoon garlic powder and salt & pepper. Stir in 2 & 1/2 ounces baby spinach. Sprinkle with 3/4 cup shredded cheddar . Cook until cheese is melted.
