Key West Grilled Chicken

3 tablespoons soy sauce
2 tablespoons honey
1 tablespoon vegetable oil
juice of one lime
1 teaspoon minced garlic
freshly chopped cilantro
Mix all ingredients in a large bowl.
Dice 2 chicken breasts into small chunks. Place in a dish with a lid. Pour marinade over chicken and refrigerate for 30 minutes.
Preheat your grill.
Skewer chicken on metal or bamboo sticks (if bamboo, soak in water for 5 minutes.)
Grill chicken on medium high about 5-6 minutes on each side, until cooked through.
Before serving, sprinkle with lime juice and more fresh cilantro. Enjoy! Goes great with rice.
