Makes 3 & 1/2 cups
Heat 2 tablespoons olive oil in a sauce pan on medium heat. Saute 1/4 of an diced onion, and 3 cloves of garlic until lightly browned-3 minutes or so.
Add 1 28 ounce can of whole peeled tomatoes-do not drain. Add 1 sprig of fresh thyme and 1 sprig of fresh basil. Bring to a boil, then lower heat and simmer for 10 minutes. Take a knife and slice the softened tomatoes. Then discard the herbs. Stir in salt and pepper to taste.
Can store in the fridge for 3 days, or freeze for up to 2 months.
